Happy Retirement Loc!
Help us congratulate our longest serving employee, Loc, on retiring after 43 years working at Green Acres Foundation! We asked Loc a few questions about her time working at the Foundation and even snuck in one of her famous recipes! Scroll down to see Loc’s butterhorn recipe.
Working at Green Acres
Loc and her family arrived in Canada from Vietnam on a cold January day in 1980. When asked what it was like moving to Canada she said, “I wasn’t expecting it to be so cold!” The amount of snow was quite a shock, sometimes reaching so high it blocked their door so they had to open a window to get out of their farm house.
Loc’s sister was the first to be employed at Green Acres Foundation and Loc soon found employment at the original Green Acres Lodge (located where Pemmican Lodge is now). The cooks at the lodge taught her how to cook and the rest is history. She loves to cook for the residents and has become friends with many of them over the years.
“I loved working for Green Acres! I think we are very lucky to work with the seniors. We have lots of fun with the residents.” Loc did not have any living grandparents when she moved to Canada and was especially grateful to work with the residents during the 19 years she did not see her parents in Vietnam. The residents felt like friends and family.
Loc is looking forward to traveling with her sisters to Vietnam to visit family. “The first few weeks will be so hot for us because we are so used to the cold,” she laughed. She is also looking forward to spending more time with her 4 grandchildren and tending to her garden and greenhouse.
Loc’s Butterhorn Recipe
Although she is a pro now, Loc loves to tell funny stories about when she was learning to be a cook. “One time I forgot something like baking soda, baking powder or egg in the cookie and it was hard as a rock! It was too late for me to make a new batch. When I handed them out I said, ‘dip them in your coffee!’ The residents all laughed. Everyone laughed so hard!” Loc noted that even though the cookies were hard, she did not forget the sugar and they still tasted delicious!
One of Loc’s favourite things to bake for the residents are butterhorns so we have included her famous recipe! This recipe is used to feed all the residents in the lodge so unless you have a big crowd to feed, it is advised to quarter this! Quartered it will make between 24 to 36 butterhorns.
Ingredients
4 tsp sugar
8 tsp yeast
2 cups warm water
8 cups warm milk
2 tsp salt
2 cups of sugar
22 cups flour
4 cups of margarine
4 eggs
Instructions
Mix 4 tsp sugar, 8 tsp yeast and 2 cups of warm water and then let it rise.
Add 2 cups of sugar, 4 eggs, 2 tsp of salt, 8 cups of warm milk, 22 cups of flour, and 4 cups of margarine. Mix well.
Let the mixture rise until doubled
Punch down the dough and rise again
Make individual buns out of the dough and let rise.
Bake at 330 degrees for 25 minutes
Drizzle with cream cheese icing and sprinkle with chopped walnuts
